Itinerary

1:00 PM: Welcome and Masala Tea

Your trip starts when you walk into a local cooking school or a person's home in Kathmandu. The first thing you will notice is the great smell of spices. You will get a warm "Namaste" and a good cup of masala tea. This tea is a sweet, milky drink with cardamom, ginger, cloves, and cinnamon. This is the right time to sit, get comfortable, and meet your teacher and the other people in the class.

1:15 PM: What We Will Cook? A Trip to the Local Market!

Next, you will take a short walk to a nearby market with your guide. This is a very lively place where daily life happens. Your guide will walk you through the busy paths. They will show you different vegetables, good-smelling herbs, and all the different spices used in Nepali food. You will learn how to pick the freshest foods for your momo fillings. This includes finely cut chicken and cabbage, good-smelling cilantro, and hot green chiles. This part of the trip connects you directly to the source of your meal.

1:45 PM: The Filling and Dough

Back in the kitchen with your fresh foods, it is time to get to work. You will learn the secrets to making the perfect momo filling. You might make a classic chicken momo with cumin and coriander or a tasty vegetarian one with cheese and spinach. You will learn how to get the flavors right. At the same time, you will make the dough from the start. You will learn the right amount of flour and water to use and how to knead it. This makes a soft, stretchy dough. It is a key step for making thin but strong wrappers.

2:15 PM: The Fold: A Skill to Learn

This is the most fun part of the class: learning to fold the momos. It is a true form of art. Your teacher will show you a few ways to fold them. You will see the simple half-moon and the round pleat. It takes some trying to get the folds right, but with help from an expert, you will be folding your own nice dumplings with pride.

2:45 PM: Steam and Eat

When your dumplings are folded, they will be put into a special steamer. They will cook until they are perfect. While the momos steam, you will make the spicy tomato sauce. The sauce is a classic side dish. You will roast tomatoes and grind them with garlic, chiles, and a special Nepali spice called Timur. This spice gives your mouth a fun tingling feeling. The combined smell of the steaming momos and the fresh sauce will be very inviting.

3:00 PM: The Grand Meal

Finally, the moment you have been waiting for arrives. The steamer is opened. A cloud of good-smelling steam comes out. You will see your perfectly cooked, plump momos. You will sit down with your new friends to eat the food you made yourself. These hot, juicy dumplings are a great reward. They taste amazing. The meal is a very good and lasting memory of your time in Nepal.
